Winemaking A traditional winemaking process is carried out in stainless steel vats of 30,000 kilograms of capacity using 100% de-stemmed grape. Must is pumped-over 3 times a day of 30 minutes each. Fermentation takes place at a controlled temperature of 28 to 30 °C during 20 days. Subsequently, wine is run-off and left for decanting until barrels are filled. .
Barrel aging Barrel aging lasts 14 months and wine is racked every 3 months.
Bottling aging Before being labelled and launched on the market, bottles remain 8 months lying down in metallic crates. These are found in an underground facility where temperature does not exceed 16 °C.
Barrel type 90% of American oak and 10% French oak
